Ingredients:

For gravy:

  • clarified butter :2 tps ghee
  • Oil: 1tps oil
  • onion :1finely chopped
  • green cardamom pods :2
  • cinnamon stick:1
  • bay leaf :1
  • cumin seeds :1 tps
  • Ginger-garlic paste :1 tps
  • tomato pureed :2
  • Cashew nuts :¼ cup, dip into warm water 15-20 mints
  • melon seeds :1 tsps (optional)
  • Red chili powder :½ tps(as per taste)
  • Coriander powder :1 tps
  • garam masala :1 tps
  • turmeric powder :½tps
  • fresh cream :½ cup
  • Saffron strands :¼ tps(dip into warm milk)
  • Salt: (as per taste)
  • Water :1 ½ cup water

For Paneer:

  • Cheese :250 grams paneer (cubed)
  • Ghee :1 tss ghee, for shallow frying

Garnish:

  • Chopped coriander leaves
  • Saffron strands soaked in milk (for extra royal touch)

Instructions:

Step 1: Preparation for Gravy

1. Heat Ghee and Oil: For the preparation of Gravy, we will first heat both oil and ghee in a pan or wok. Heating both oil and ghee together gives a good texture to the gravy.

2. Add Spices for Tempering: When the ghee is heated well, we will add spices one by one like cinnamon stick, cardamom and bay leaf. Let these spices sizzle one by one and then we will add cumin seeds to it. All the spices will splutter. The spices release an aromatic flavor which forms the base of the gravy.

3. Add onion and ginger-garlic Paste: next add chopped onions in it and keep frying well, fry the onions till they turn golden brown. After that add ginger garlic paste in it and keep frying well for 2-3 minutes till the smell of raw garlic disappears.

4. Add Tomato Puree: Now add tomato puree into the masala, keep mixing everything and cook tomato puree for 5-7 minutes till the oil separates from the masala.

5. Grind the Cashews And Melon Seeds: for next,blend the tomatoes well with the masala. Now put the soaked cashews nuts and melon seeds in the grinder and grind them, make a smooth paste and add this paste to the tomato masala and cook it for 4-5 minutes.

6. Add Pices: now add red chilli powder, turmeric powder, garam masala, coriander powder,salt(as per taste) mix everything well for 1-2 minutes. These spices get infused well in the gravy and make the gravy tasty.

7. Add Cream: To give a smooth and luxurious texture to the Shahi Paneer gravy, add fresh cream and stir its consistency. Cook the gravy for 5 minutes so that the cream and spices get blended well in the gravy.

8. Add Saffron Milk: The gravy is not completely ready yet, now to make it royal, we will add saffron soaked milk. Saffron milk will give a beautiful golden color to the gravy which is considered the signature of royal dishes.

9.Add water to adjust consistency: Lastly we will add water to the gravy as per our calculation. If you want to keep the consistency of the gravy thin then add some water to it. If you like thick gravy then add lillte water to it. Then cook the royal paneer gravy for 10-15 minutes on low heat. In this way all the spices will get mixed well and good flavor will come out

Step 2: Shallow Fry the Paneer

1. Shallow Fry the Paneer: To add paneer in Shahi Paneer gravy, now we will fry the paneer, for that take a pan, add ghee in it and heat it, add paneer cubes in it. Fry the paneer till the paneer becomes golden brown and its edges become a little crispy, this makes the paneer dish even more delicious.

2. Combine Paneer and Gravy: After paneer is ready, add paneer to the cooked gravy. Mix paneer slowly, otherwise you can make paneer cubes. After that simmer the gravy for 5-7 minutes so that the taste of gravy blends in paneer.

Tips for Shahi Paneer

• For Extra Richness: If you want to make Shahi Paneer gravy more rich and creamy, you can add Khoya (reduced milk) for it.
