Ingredients for Palak Paneer Kofta:
To Make Kofta:
- Cottage Cheese (Paneer):200 grams, crumbled
- Spinach (Palak):2 cups, pureed
- Boiled Potatoes (Aloo):1 mashed
- Green Chilli (Hari Mirch):1-2, finely chopped
- Ginger(Adrak): 1 tsp, grated
- Cumin (Jeera Powder): 1 tsp
- Coriander Powder (Dhaniya): 1 tsp
- Spices (Garam Masala): ½ tsp
- Salt(Namak): to taste
- Corn flour: 2 tsp
- Rice Flour: 1 tsp (optional, for extra crispiness)
- Cashew Nuts (Kaju):8-10, crushed
- Oil(Tel): (mustard or vegetable oil)
To Make Gravy:
- Spinach (Palak): 1 cup, blanched
- Onion (Pyaaz): 1 chopped
- Tomato (Tamatar): 1 pureed
- Ginger Garlic Paste (Adrak-Lasun Paste): 1 tsp
- Cumin Seeds (Jeera): ½ tsp
- Coriander Powder (Dhaniya Powder): 1 tsp
- Red Chili Powder (Laal Mirch Powder): 1 tsp
- Turmeric Powder (Haldi Powder): ½ tsp
- Garam Masala: ½ tsp
- Salt (Namak): according to the taste
- Fresh Cream: 2 tsp (optional, rich and creamy texture)
- Dried Fenugreek Leaves (Kasuri Methi): 1 tsp (optional)
- Oil (Tel): 2-3 tsp

Method to make Palak Paneer Kofta:
Step 1: To Make Kofta Mixture
1.Blanch Spinach: First of all wash the spinach properly and boil water in a large bowl, blanch the spinach in boiled water for 2-3 minutes. Keep it aside to cool down a bit, then put it in a blender jug and blend it, make a smooth puree.
2. Mash the Potatoes: Then boil the potatoes in a bowl. Mash it after it cools down a bit, mash it well so that no lumps remain.
3. Make Kofta Mixture: In a large bowl, add mashed aloo, pureed spinach, crumbled paneer, chopped green chillies, cumin powder, coriander powder, grated ginger, garam masala, crushed cashews and salt and mix everything well.
4. Bind the mixture: Now we have to bind the kofta. For this take rice flour and corn flour, add potato mixture to gently. The mixture should be a little firm so that it can be shaped like a kofta. If the mixture is too sticky then you can add more cornflour to it.
5. Shape the Koftas: Now take some oil in your hands and take a small portion of the mixture and give it a round shape so that it can be cooked easily.
Step 2: Frying the Koftas
1. Now it is the turn to fry the koftas. Take oil in a pan and heat it well. Do not heat the oil too much, keep it on medium heat. Now carefully put the koftas in the oil. Fry the koftas well for 4-5 minutes and wait for them to become golden brown and crispy.
2. When the koftas are fried well, remove them from the tissue paper so that the tissue paper absorbs the oil. Now these koftas are ready.
HOW TO MAKE DAL MAKANI AT HOME
Step 3: To Make Gravy
1.Take a pan for making gravy, put 3-4 tsp oil in it, add cumin seeds in the oil and splutter it once. After that add chopped onion in it, and cook till golden brown, then add ginger-garlic paste in it and cook for 30 seconds till the smell of garlic goes away.
2.Now add tomato puree in it. Fry it well till the oil separates from the masala. Now we will add spices in it. red chilli powder, turmeric powder, garam masala and coriander powder. Cook this masala well for 2-3 minutes, so that the masala gets mixed well.
3. After this we will add spinach puree to it and cook it for 5-7 minutes. Then to make the gravy creamy, add cream to it and simmer it for 2-3 minutes. Set its texture as per your choice. Lastly add salt according to your taste. You can also add fenugreek to it for extra flavor.
Step 4: Assemble the dish
1.Now our Palak paneer kofta is ready. How to serve it. Whenever you want to serve Palak paneer kofta, add the fried kofta to the gravy and let it cook for 2-3 minutes so that the kofta gets soaked in the gravy and becomes a little soft and juicy.
2.Now serve this hot Palak paneer kofta with roti, naan and rice. It tastes very good with naan too.
Tips for Palak Paneer Kofta:
• Texture of Koftas: Do not fry the koftas too much, otherwise they will become hard and a bitter taste will be felt. Fry the koftas lightly, so that they remain soft and tender. This will give a better taste.
