MOONG DAL TADKA INGREDIENTS :
FOR MOONG DAL :
- Yellow Split Lentils (Moong Dal): 1 cup
- Water (Pani): 3 cups
- Namak (Salt): ½ teaspoon
- Turmeric powder (Haldi Powder): ½ teaspoon
- Coriander Leaves (Dhaniya): chopped

FOR TEMPERING (TADKA):
- Mustard Seeds: ½ teaspoon
- Cumin Seeds (Jeera): ½ teaspoon (optional)
- Green Chilli (Hari Mirch): 1-2
- Dry Red Chilies: 1-2 chopped
- Red Chilli Powder (Laal Mirch Powder): ½ teaspoon
- Ginger (Adrak): 1-inch piece, chopped
- Garlic (Lahsun): 3-4 cloves, chopped
- Asafoetida (Hing): 1pinch (optional)
- Onion (Pyaaz): 1 chopped
- Clarified Butter (Ghee):2-3tablespoons (oil/ghee)
- Coriander Powder(Dhaniya Powder): 1 teaspoon
- Garam Masala: ½ teaspoon (optional)
- Curry Leaves: 2-3 (optional)
METHOD FOR MAKING MOONG DAL TADKA:
STEP 1: COOK MOONG DAL
1. Washing Moong Dal: First of all, you have to wash moong dal properly so that no dirt remains in it. Wash it twice in water.

2. Cook the lentils: Take it in a large pressure cooker, add 3 cups of water in it (you can use less or more water as per your requirement). After that add the lentils and 1 spoon of ghee. When the lentils are cooked a little, add ½ turmeric, salt (as per your taste) and ½ red chilli powder in it. Then simmer it on low heat for 5 minutes, close the cooker and cook it by putting 3 whistles.
3. Check Consistency: open the pressure cooker and check its consistency. If you feel the dal is a little thin then you can open the lid and cook it for 5-7 minutes. If it is too thick then you can add water to it to make it thin. Then cook it a little.
STEP 2: PREPARE THE TEMPERING (TADKA)
1. Heat the Ghee: Take a pan for tempering the moong dal. Add 2-3 spoon ghee in it. When it gets a little hot add cumin and mustard seeds. Let it splutter for a few seconds.
2. Add Spices: In the ghee add dry chillies, onion and make it golden brown, then add ginger, garlic and keep stirring till the smell of garlic goes away.
3. Other Spices Additions: When ginger and garlic are sautéed, then add coriander powder, red mirch powder and garam masala to it. Cook for 30 seconds so that the spices release their full flavour and are cooked well.
4 Asafoetida and Curry Leaves Additions: further add hing and curry leaves to it. This is optional if you want to add it to the dish. Adding hing and curry leaves brings out its unique flavour and it also helps in preparation.
TEP 3: MIX THE DAL IN THE TADKA
1. Add the dal in the tadka: When the masala is ready, the oil separates from the masala, then carefully add the dal which you had cooked earlier in the tadka. Then mix all the masala and spices after stirring it well. Let the dal simmer on low heat for 5 more minutes.

TIPS FOR MOONG DAL TADKA:
